The American Culinary Federation’s more than 1,800 member chefs selected sustainability as one of the top restaurant trends of the coming year in the National Restaurant Association's annual survey. The chefs also rated environmentally friendly equipment as the top kitchen equipment trend, and the hottest restaurant concept in 2010 as restaurants with gardens. More

Marres, the Centre for Contemporary Culture in Maastricht, the Netherlands, recently announced the winners of the 2009 Great Indoors interior design awards. Presented biennially, the international competition seeks to recognize the importance of superlative (realized) projects and to raise the overall quality of interior design. Pending home sales have risen for nine months in a row, a first for the series of the index since its inception in 2001, according to the National Association of Realtors®. Lawrence Yun, NAR chief economist, said home sales are experiencing a pendulum swing. "Keep in mind that housing had been underperforming over most of the past year. Based on the demographics of our growing population, existing-home sales should be in the range of 5.5 million to 6.0 million annually, but we were well below the 5-million mark before the home buyer tax credit stimulus," he said. Yun cautioned that home sales could dip in the months ahead. More

One of Singapore's top designers, Feng Zhu, asked a pointed question to a panel of mostly Western designers at the International Council of Societies of Industrial Design conference that got the mostly Asian crowd really buzzing. "How much does making money drive design and how much does saving things?" It's one thing for the rich, consumerist West to begun to shift to a post-consumerist, sustainable society and quite another for Asia, which is just beginning to get the wealth to buy nice things to be told to give them up in the name of the planet. U.S. hotels on track for 2011 recovery

Smith Travel Research last week issued a forecast calling for the U.S. hotel industry's rates, revenue, and occupancy to begin a recovery in 2011. The firm said that the current construction pipeline should be mostly completed by 2011, with growth for the year projected at 0.8 percent. At the same time, demand will grow by 3.2 percent during 2011. This will lead to a 2.4 percent year-over-year increase in occupancy, a 3 percent increase in average daily rate, and a 5.5 percent increase in revenue per available room, according to the report.
