Natural colours have overtaken their synthetic counterparts for the first time ever, and the trend towards clean label products is one of the key drivers according to new data from Mintel and Leatherhead Food Research. Continuing consumer and retail demand for natural and clean label products — especially within Europe — has helped the market for natural colours boom in recent years, with annual market growth in the last four years estimated to be more than 7 per cent per year.

Craving. It doesn't just happen to food addicts. Most people have experienced the impulse to seek out and consume a favourite packaged snack food. Food companies seek the perfect spot of just enough sugar to create what they call the bliss point. Food scientists have even studied the architecture of the mouth. In a paper published in the Journal of Biomechanics, scientists from the Nestlé Research Center examined the "detection mechanisms in the oral cavity," to study how well the mouth could detect the thickness of a plastic disc placed on the tongue.

An international study involving a University of Calgary researcher has found that managed honey bees aren't nearly as successful at pollinating as their uncultivated cousins. "It seems to be more about quality than quantity of pollen that's delivered," said Lawrence Harder, professor in the department of biological sciences in the University of Calgary's science faculty.

FAO: Food prices stable, cereal output seen up in 2013

World food prices held steady in February as falling wheat and sugar offset gains in vegetable oils and dairy prices, the United Nations' food agency said, forecasting increased cereals production in 2013. Global grains prices have eased in recent months due to optimism that forthcoming harvests will replenish supplies after producers were hit by the worst U.S. drought in more than 50 years, which sent food prices surging in mid-2012.

Crown patent to improve canned food processing

Crown has filed a patent involving induction heating in a bid to improve food processing in metal cans. Crown said the improved processing of edible products within metal cans can be achieved by using beverage-style cans that are better at resisting increases in internal pressure and using induction heating to heat a small amount of water within the can to process the particulate inside it.

ICCO: Cocoa deficit in 2013 no cause for concern

The International Cocoa Organization (ICCO) has said that chocolate manufacturers needn't panic by its forecasted deficit for the 2012/13 crop season. The ICCO forecast that global cocoa production for the crop year would reach 4,003 million tons, while demand would be 4,008 million tons, leaving a 45,000 deficit.

Salt identified as autoimmune trigger

For the past few decades, health officials have been reporting increases in the incidence of autoimmune diseases such as multiple sclerosis (MS). Now researchers at Yale School of Medicine, Harvard Medical School and the Broad Institute have identified a prime suspect in the mystery — dietary salt. In the March 6 issue of the journal Nature, Yale researchers showed that salt can induce and worsen pathogenic immune system responses in mice and that the response is regulated by genes already implicated in a variety of autoimmune diseases.

New meat science major already gaining interest

With the change from quarters to semesters at the Ohio State University, students were given the opportunity to major in meat science. Dr. Henry Zerby, the leader in creating the new major, said the conversion to semesters was an opportunity to redesign the curriculum. The major is training students for positions in food safety, product development and further processing across multiple species. The class combination includes food science, meat science and animal science, and students will also be studying value added processing, food safety and niche marketing.

U.S. scientists teaming up to improve organic produce safety

A group of scientists at the University of Tennessee Institute of Agriculture and North Carolina State University are working together to improve the safety of organic produce — naturally. The four-year, multidisciplinary project is supported by a nearly $2 million grant from the U.S. Department of Agriculture's Organic Agriculture Research and Extension Initiative (OREI) program.

Wild pollinators increase crop fruit set regardless of honey bees

Changes made by humans to the natural landscapes can often compromise ecosystems, which paradoxically are vital for human survival. Pollination of crops by wild insects is one such vulnerable ecosystem service, as wild insects are declining in many agricultural landscapes. The study, recently published in Science, focused on understanding whether the ongoing loss of wild insects impacts crop harvest. For this purpose, the researchers compared fields with abundant and diverse wild insects to those with degraded assemblages of wild insects across 600 fields at 41 crop systems on all continents with farmland. The study found that fruit set, the proportion of flowers setting seeds or fruits, was considerably lower in sites with less wild insects visiting the crop flowers.
